Pesto & Kielbasa Pasta in a Flash

This is a dish I can usually throw together at the last minute… the only super fresh ingredient you need is red bell pepper, so I can keep most everything on hand just in case I need to make a quick, easy & homey dinner.

You will need:

  • Half a box of whole grain rotelli noodles
  • 1 turkey kielbasa
  • olive oil
  • 2-3 red bell peppers
  • storebought pesto (I prefer Trader Joes)
  • garlic salt
  • salt & pepper to taste
  • Mojo de Ajo if you have some on hand


  1. Start your water boiling for the pasta.
  2. Cut your kielbasa in half lengthwise, then cut into quarter inch thick pieces.
  3. Saute the kielbasa in olive oil.
  4. Add pasta to boiling water
  5. Cut up the red bell peppers into strips that a fork can easily pick up
  6. add bell peppers to kielbasa pan, saute until crunchy, not too squishy
  7. Prepare the pesto… if if’s already a thin sauce you can use it as is. The Trader Joes pesto is a thick spread, so I scoop half a jar into a bowl then I thin it with some olive oil and a half cup of the water the pasta is cooking in.
  8. Drain pasta and add it to the kielbasa pan. Pour the pesto over the top. Toss everything and you’ve got a meal!
  9. Salt and pepper to taste (remember pesto is already salty so taste before you salt)
  10. A little Parmesan cheese goes great on top… enjoy!

I’m stalking you! In a good way! Thanks for the tips. I just finished making Jade’s Guinness Beef Stew for a friend that’s having a hard time at home. If I can’t watch friends make recipes they recommend, this blog is the next best thing! Good luck and I’ll be following you 🙂
