Bacon Jam – a curious yet delicious spread!

20121209-204823.jpgWe have some friends who have a Bacon Fest every fall… we get together and eat all kinds of bacon goodness. Last year I made Bacon Cups with Sweet Potato Hash and it was delicious. This year I started to look for recipes fairly early, and I ended up finding a great one for Bacon Jam… yes, you read that right… Bacon Jam. It’s full of bacon and has a sweet caramelized onion flavor to this yummy spread.


  • 3lb smoked bacon (I got mine from the meat counter)
  • 4 small onions
  • 2 cloves garlic
  • 1 cup brewed coffee
  • 1 cup apple cider vinegar
  • 1 cup brown sugar
  • 1/2 cup maple syrup


  1. Cut the bacon into half inch bits. Brown it in 1 lb batches in your dutch oven or other large pot and drainon paper towels. Pour off excess bacon grease.
  2. Slice the onions into small half circles and saute in a bit of bacon fat until clear. Add chopped garlic right at the end.
  3. Add the additional ingredients, bring to a boil.
  4. Reduce heat, add the bacon back to the mixture.
  5. Allow the mixture to simmer on the stove for 4 hours. Mix every 30 minutes.
  6. Use your immersion blender or food processor to blend the ingredients. Keep this in the fridge for up to 3 weeks if it lasts that long!


I served this by spreading it on small rounds of bread, topped with parmesan cheese and toasted under the broiler. I also left a bowl of it out with some crackers on the side. YUM!
